shepherds pie - easy irish comfort food

as i alluded to in my previous post, this weekend, i made shepherds pie. it was fantastic and easy to make. learn how to cook with angry ninja! heres how:

prep time: approx 45 minutes.

ingredients:

  • 1.5 lb lean ground beef
  • 1 red or yellow onion (diced)
  • 4 white mushrooms (sliced)
  • worcestershire seasoning
  • a little bit of milk/cream
  • 4 medium - large potatoes
  • i bunch cilantro
  • 1 egg
  • salt, pepper, seasoning salt, butter

directions:

  • peel and quarter the potatoes and dump them into boiling water.
  • saute onions with 1-2 tbs of oil, when done, add the ground beef and brown.
  • season meat and onion with worcestershire seasoning , salt, pepper, and seasoning salt. you can add a little bit of soy sauce or tomato sauce for taste.
  • when meat is almost browned, add in the mushrooms and cilantro. finish and set aside. set oven to preheat at 350
  • by this time, your potatoes should be ready for mashing. mash with butter milk/cream and salt to taste.
  • scoop your meat skillet into a casserole dish or brownie tin.
  • top and spread mashed potatoes on top of the meat layer.
  • crack open and egg and brush it over the mashed potato layer
  • pop casserole dish/brownie tin into the oven for 30 minutes.

and last of all, enjoy awesomeness.

pizza + omelette = awesome brinner

last night was pizza night. when that happens, i usually have a bunch of toppings left over. while surveying the fridge tonight, i had a revelation: i love pizza. i love omelettes. i have leftover pizza toppings. time to make a pizza omelette.

follow these simple instructions to make your own awesome brinner. prep time: approx 25 minutes.

ingredients needed:

  1. 2 eggs
  2. 1/4 green pepper (chopped)
  3. 1/4 red onion (chopped)
  4. 7-9 slices of pepperoni
  5. 2 sliced mushrooms
  6. handful of spinach
  7. shredded mozzarella (to taste)
  8. tater tots (however many you think you can eat)

directions:

  1. preheat the oven for the tater tots. while the oven is heating, chop up your onions, bell peppers, and mushrooms.
  2. beat eggs in a bowl.
  3. youll have a few minutes here. turn on tv and catch up on the nba playoffs.
  4. after the oven has heated, place the tater tots on a baking tray and insert in oven. these should take about 20 minutes.
  5. when there are 10-12 minutes left until the tots are done, sauté the ingredients you prepared in the first step.
  6. when the onions begin to turn translucent, add the spinach and the pepperoni. there should be about 6 minutes left until the tots are done.
  7. when spinach and pepperoni look ready, add the eggs. flip when necessary.
  8. top with mozerella and ketchup if desired. add tots on the side.
  9. plate and garnish.
  10. grab a fork and enjoy!

if you followed the directions, you should come up with something that looks kinda like the image below.

ps. it aint brinner without potatoes. also, derek fisher never gets called for fouls at the end of games. not tonight, not ever.
