pizza + omelette = awesome brinner
last night was pizza night. when that happens, i usually have a bunch of toppings left over. while surveying the fridge tonight, i had a revelation: i love pizza. i love omelettes. i have leftover pizza toppings. time to make a pizza omelette.
follow these simple instructions to make your own awesome brinner. prep time: approx 25 minutes.
ingredients needed:
- 2 eggs
- 1/4 green pepper (chopped)
- 1/4 red onion (chopped)
- 7-9 slices of pepperoni
- 2 sliced mushrooms
- handful of spinach
- shredded mozzarella (to taste)
- tater tots (however many you think you can eat)
directions:
- preheat the oven for the tater tots. while the oven is heating, chop up your onions, bell peppers, and mushrooms.
- beat eggs in a bowl.
- youll have a few minutes here. turn on tv and catch up on the nba playoffs.
- after the oven has heated, place the tater tots on a baking tray and insert in oven. these should take about 20 minutes.
- when there are 10-12 minutes left until the tots are done, sauté the ingredients you prepared in the first step.
- when the onions begin to turn translucent, add the spinach and the pepperoni. there should be about 6 minutes left until the tots are done.
- when spinach and pepperoni look ready, add the eggs. flip when necessary.
- top with mozerella and ketchup if desired. add tots on the side.
- plate and garnish.
- grab a fork and enjoy!
if you followed the directions, you should come up with something that looks kinda like the image below.
ps. it aint brinner without potatoes. also, derek fisher never gets called for fouls at the end of games. not tonight, not ever.
